I've always loved this one from Lord Byron:
She walks in beauty, like the night
Of cloudless climes and starry skies,
And all that's best of dark and bright
Meets in her aspect and her eyes;
Thus mellow'd to that tender light
Which Heaven to gaudy day denies.
One shade the more, one ray the less,
Had half impair'd the nameless grace
Which waves in every raven tress
Or softly lightens o'er her face,
Where thoughts serenely sweet express
How pure, how dear their dwelling-place.
And on that cheek and o'er that brow
So soft, so calm, yet eloquent,
The smiles that win, the tints that glow,
But tell of days in goodness spent,—
A mind at peace with all below,
A heart whose love is innocent.

There is a song by "Frank and Nancy Sinatra" called
I know I stand in line,
until you think you have the time
to spend an evening with me
And if we go some place to dance
I know that there's a chance
you won't be leaving with me
And afterwards we drop into a quiet little place
and have a drink or two
And then I go and spoil it all
by saying something stupid like,
"I love you"

There is a famous song (songs are poems too) by Joe Cocker called 'You Are So Beautiful.'
It's simple but articulate. If you don't know the lyrics do a quick lyrics search on Yahoo and you'll have them.

If you not a poet yourself, try either some of the Shakespearean sonnets (Shall I compare thee to a summer's day...comes to mind) or Sonnets from the Portuguese by Elizabeth Barrett Browning.

Try writing one yourself and let her know,
cuase once she knows that you really tried, she like it and you all the better. That and you can stick in such things as inside jokes and things that are personal to the both of you.
It also doesnt have to be long, just give it a try.
If you need help rhyming try: http://www.rhymezone.com/

I wanted to let your know
I think you're really cool
When I see you my eyes goes slow...
And I feel like a fool
You're amazingly beautiful
I get caught up in it
I wanna spend time with you...
And let our smiles get lit.

I Just Want You to Know
When I look into your face I am enthralled,
When I see your eyes peering at me
It makes me shiver inside.
You are such an important person to me,
I just want you to know...
How I feel.
You are one of the most beautiful women I have ever seen.
And, I feel great when we're together.
I Just want you to know how much I care.
I just wrote this for you - for her... ;)
