tidus doesn't die. a dream can't die.
he dies because he ends the reason the fayth dreamed him into existance.
because the fayth don't need him anymore, they stop dreaming him into reality.
now, you ask, was his father also a dream? if he was, how could he have become sin? -the same reason tidus was dreamt. except jecht didn't do it properly.
if his father wasn't a dream... how was he his father, you ask? because it's a dream by the fayth.
he's just a dream of the fayth? then why does sin recognize tidus? because reality is held together by the fayth.

Tidus was a dream of the Fayth and didn't truly exist. Jecht was also a dream but took on the form of the final summoning for Lord Braska. Thus making him into Sin and real at that. Tidus comes back in FFX, you just need to meet the requirements for getting that ending. He pops up out of the water at Yuna's and Wakka's home island and they run off together. But X2 didn't cover that bit.

He doesn't die because in the story he isn't truly alive anyway. He doesn't return in Final Fantasy XI because there is no relation between X and XI (XI is an online game anyway.) In X-2, however, if you beat the game with 100% completion, Yuna gets a wish to bring him back. You should play Final Fantasy 10 is you want to know more, it would explain a lot. Also, the stories of all the Final Fantasy games are entirely different and have nothing to do with the previous, with the exception of X-2, of course.

Tidus never really existed in the first place. He was in an alternate reality created by the fayth. Basically he was in their dreamworld. He was brought into existance by the fayth to defeat sin.
