I love fantasy: It's one of my favorite genres. I'm an elementary librarian, so my suggestions may lean toward books that kids like, but that adults can also enjoy.

Kids first..

Dark is Rising books (5) by Susan Cooper
Magic Shop books and Unicorn books by Bruce Coville
Harry Potter (of course)
any books by Cornelia Funke
Circle of Magic, Circle Opens, and the more young adult books, Song of the Lioness, The Immortals, Aliane, and Protector of the Small series by Tamora Pierce
The Enchanted Forest series by Patricia Wrede, as well as her books that are for a more adult audience.
Narnia books by C.S. Lewis

Adult Fantasy

Tolkien, of course
any books by Charles de Lint (his are modern fantasy)
The Belgariad and The Mallorean series by David Eddings
Dragon Rider books by Christopher Paolini
books by Terry Goodkind
The Deed of Paksenarrion (trilogy) by Elizabeth Moon
The Amber books by Roger Zelazny

Just a word of note: Some people list Anne McCaffrey as a fantasy author. Though I love all of the Pern books, these are science fiction, not fantasy. When you realize that the dragons were genetically engineered, you come to realize that they do not have the magical elements of fantasy.

I love pretty much anything by David Gemmell, his books got me hooked on heroic fantasy (any of the "Druss books are great as is the "lion of Macedon" series"). Another great author is Steven Brust (my favourite of his is "Taltos the assasin"). Anything by Terry Pratchett is beyond great - the man is in his own league! (very funny, very very funny and fantasticly well written).
If you like science fantasy try Iain M Banks (he also writes fiction under "Iain Banks") a good starter would be "The Player of Games"

Good luck - im a bit envious of you being able to read all of these books for the first time - take my advice and start with David Gemmell though!

I suggest my absolute favourite author Anne McCaffrey. The Pern dragonroder series is my absolute favourite followed closely by The crystal singer series, then the Brain and brawn ships series. I also love Sheri S. Tepper, it is an obscure series of hers, Mavin Manyshaped, I highly recommend it. Then Robert Silverberg is terrific too, I love his Majipoor series. I first read Lord Valentines castle, from the series then I went and bought the entire series, it was just that good.

Terry Pratchett--his fantasy is political, but very funny to make up for it. Don't read his books in a library.

Lynn Flewelling--how shall I put this--creepy just doesn't do her justice. The Bone Doll's Twin sent chills up my spine. Stalking Darkness just grossed me out. But then again, I am a self-ackowledged wussy, so don't take my word for it. You might think it all very tame. Come to think of it, you probably would, if you're using the dude from The Crow as your avatar do-hickey.

Raymond E. Feist is so extremely great!!!! He created such a good base in his first book that all the following books are good too. Technically, his books are very very good! He writes about a world which we can compare with the Middle Ages of our world, but with elfs, gnomes, goblins, dragons, wizards etc. It is fantastic!!! I am so fond of his books. He has a few series, and all those series fit in on big story. It is about the universum and worlds in fight etc. But he also wrote books about a young pickpocket in the Middle Ages and he descripes a lot of nations. You really have to try a book of him.

He also wrote books with Janny Wurts and others

Several people have mentioned Harry Potter, so I'll put in a good word for Anne McCaffrey's Pern series (starting with the Dragonriders of Pern novels).
