A bunch. Cord saws and grit were used to quarry along with stitched holes and wedges. Today power saws with carbide "teeth" are used.

For the sculpture, powered chisels, chipper hammers and grinders have taken the place hand work, but the technique is the same.

For things like engraving (tombstones etc.) masked sandblasting has made things much faster. The really amazing tool though is the hydroshear which uses a fine jet of super high pressure water to cut like a high-speed saw. It will cut through steel if that is desired.

Well, for one thing....
Nowadays marble is cut by diamond bladed saws...not by slaves hammering away on chisels

Not. Just the way you move the blades has changed (mechanized). The basics are exactly the same.
