Isnt the basic reason obvious, because it is the sound of the shell that 1st attracts the boys together.
If you want to go into symbolism, the shell represents order in the novel, so when he sounds the shell, it is the call for order/beginning of order.

I believe it's because the conch, what the boys use as a sense of unity, trying to form some sort of unitybetween them all before it goes all haywire.

Because ralph uses the conch shell to signal any other people on the island to come towards him. They come to the sound of the shell.

because piggy found the conch and gives it to ralph and piggy tells him that he can use it to call them if they will have an assembly and he can blow it like a trumphet.... so it's the sound of the shell

The name "Sound of the Shell" reasons because THERE is where Seth (the character) opens the story (in his lab) as I remember, seeing the movie.
There were "odd" SOUNDS he heard inside his lab (caused by the emerging fly.)
