Primarily a rushing offense - use your linebackers to shoot the gaps - keep contain with cornerbacks to break the option and use your own offense to keep them off the field by using a lot of clock.

I think the best way to stop the wing-T is to use a 4-4 defense. By using 4 down line man and 4 linebackers, you can have the defensive end key the quarter back while the outside linebacker will key the option running back. the 2 inside linebackers will key on all inside runs. The 3 deep defenders will pursue all runs or drop back into coverage. The key to stopping the wing-T would be for your defense to practice against a mock offense until they are not thinking, but simply reacting.

Smack the team in the mouth (figuratively) because a single-wing offence is a gimmicky offence. Make sure everyone knows their responsibilities and one of your LB's should be a spy on the QB.
