i mean with the water pressure at the weight of a couple atmospheres would you be pancaked?

You are mostly water. As long as you can compensate the pressure in your lungs which is why scuba tanks have tremendous pressure, you should be okay. An egg won't break on the ocean floor either. They break from uneven pressure.

People can not go down thousands of feet unassisted. The most a human can dive without gear is just over 200 feet (pearl divers of wherever, with weight belts).
People that dive below this need to have either a different air to breathe, or to be surrounded by an uncrushable bathysphere. And that answers your question. People would not be crushed like an egg on the ocean floor. They would have to be acclimated ala the movie "Abyss", or they would be in an UNCRUSHABLE man made container.

As you go deeper the pressure becomes stronger. sink to the bottom of an ocean and when they fish you out you will look like a little ball of organic matter.

You'll get wet. That's all that will happen........unless you try to go down thousands of feet without air tank......and than you still can't go that far as your lungs couldn't handle it.
