And that I have been over watering the tree (I water it every other day or so) apparently it makes the leaves to big and nothing gets to the fruit! Is that true?

We had 2 fig trees my very sweet neighbor planted for us from about 1984 till last year. He got them established for us. We never used to water them and had great fruit from them. But ours also used to get ripe in the beginning of July so they were probably different varieties than what you have.

Also, the way to tell if some varieties are ripe is the bottom has a bead of honeydew on it when it is ready. You can also tell by color.
