Kansas dragon had the best answer, in point of fact i was going to make that suggestion myself.
1 cut across, 1 cut down, 1 cut all the way around inside the pie.
You can't always stack the 4 portions to make the final cut because,
a: a cream pie would just ooze out from the weight.
b: a fruit type pie (jelly) would collapse and just make a mess.
Great for food fights but not very practical
the suggestion to cut 2 vertical and 1 horizontal is by the way for a CAKE. which would stand up to that type of cut, a pie would not. for the same reason as stacking.

1 cut horizontal (looking down at the pie)
1 cut vertical (looking down at the pie)
1 cut parallel to the table halfway between top and bottom of the pie
edit: to create a dramatic effect, toss the pie into the air and perform the final cut with a katana.

8 equal pieces? The pie must be extremely symmetric and you must cut with extremely precision. Two vertical cuts and one horizontal.

cut the pie into an 'X' or 4 equal pieces
then stack them on top of each other and make the last cut!

Assuming the pie is a circle, cut vertically, horizontally, and parallel to the table.
If the pie is a rectangle, just cut once vertically and twice horizontally.

One circular cut precisely centered and sized to divide the inner and outer portions exactly, then 1 cut each direction to cut those two portions into fourths.
hmm.. I see several successful options already.
btw, a local restaraunt will sell you a pie cutter that will do it in one cut.

use one knife in shape of X size of pie then regular knife for a top to bottom mid vertical cut and side to side horiozontal mid cut..3 cuts..8 peices just like Mom used to make

cut back it in 0.5 =2, stack it cut back it in 0.5 lower back =4, stack it and cut back it lower back = 8. the only downfall is you have got a squashed pie! even yet it rather is going to likely be in equivalent areas. Or lay them end to end and make one long cut back rather of stacking them..
