I liked Neuschwanstein when I was in Europe. It was used in the making of the movie "Chitty Chitty Bang Bang" (Walt Disney). It's not a historic castle. It's just very "whimsical". It was home to Ludwig II of Bavaria.

Second favorite is Helsingor Castle in Denmark (where Hamlet was recently filmed). Helsingor has a far more interesting history. It has a real dungeon with various instruments of torture.

Heidelberg Castle is also a close third.

For Germany, Neuschwanstein would be an obvious answer, but bear in mind that it is also a very busy tourist destination, and it isn't exactly "authentic", having been built ty the infamous King Ludwig II about 130 years ago or so. Germany has LOTS of castles; I can't stress that enough. A few German contenders would be Reichsburg Cochem on the Mosel River, Burg Rheinstein and Burg Marksburg on the Rhein River, and that's just from the area I live in. I would say that Burg Hohenwerfen in Werfen, Austria would be another big contender.

Malbork in Poland is beautiful. The surrounding area and the castle are amazing.

I like the Vellver castle, from Mallorca ( Spain ) but that's because it's where I was born..LOL
