This summer, I am going on a vacation to Italy and Greece. So should I go to them on separate trips or on the same one? I am just going to be there for two weeks. Will I have enough time to see all the good sights in Italy like Rome, Tuscany, and Venice and in Greece like Athens and Olympia? What would you do?

It depends! If you organize your trip yes you can spend one week in Italy and one in Greece.
Personally I would start from Venice (2 days) then Firenze (2 days) and finally Rome (3 days) . Then I would pick up the boat Brindisi - Patras and visit Olympia (2 days). Finally I would leave for Athens the rest of the days.
Probably you could plan to see archaeological sites and Museums. so make a good list of all places to visit.
Take care of
1. bookings for hotels, tickets for airoplane or boat (during summer you should fix them - avoid August to my opinion)
2. the days and the hours that Museums and archeological sites are open as well as the exhibitions that will be active during your visit.
Do not waste the opportunity to taste local food at each of these destinations.
For your assistance I mark a site that includes a list of all Greek archeological sites and Museums. However confirm timing and exhibitions directly with each entity. It may have changed.

That should be more than enough time. You can basically see all of Rome in two days. Tuscany is just a short train ride from there. Venice might be difficult to see because it is on the opposite side of the country. But yeah, a week in country should suffice as long as plan ahead and have a schedule of what you want to do.

Go on the same trip for better memories ;) You should be able to see all the sites, set a schedule for yourself

take two trips. take as many as you can. i was in japan for three weeks and i only got to see a fraction of what i wanted to; sightseeing takes time.
