"Fusion" music is a compound of two elements with their own musical history.
Originally, I think "fusion music" referred to jazz versions of classical music, especially romantic classical music. Jack Fina (with Freddy Martin at the piano) playing "Bumble Boogie," a jazz version of Rimsky-Korsakov's "Flight of the Bumble Bee" or Carmen Cavallaro's "Anitra's Boogie," a piano and jazz combo version of Edvard Grieg's "Anitra's Dance" (from Grieg's Peer Gynt Suite) are fusion in this sense.
Jazz itself is "fusion" of African rhythem and drums with European melody and Caribbean percussion, and "rock and roll" is a fusion of pop and blues balladry with boogie woogie (rock = singing boogie woogie! = Fats Domino).
I've heard the word "fusion" used a lot with international music, especially Brazilian jazz, especially Bossa Nova, with electronic instruments and mixing.
So music that is demonstrably a blend of established musical traditions is "fusion."

Fusion is a mixture of two or more types of music to form a third/new form. Rock and roll came from a fusion of blues, gospel and country music. Fusion Jazz is the merging of jazz with other styles, particularly rock, funk, R&B, electronic music and world music.

Traditionally, fusion is a style of music that started in the late sixties. Jazz artists were seeing how much popularity and money rock musicians were making and a new branch of jazz sprung up which was mostly electric instruments (traditional jazz guys are against electric instruments). The new style was very tough and angular.
If you want to hear a couple - try either Weather Report or Mahavishnu Orchestra (my favorite).

It is when two different styles come together to form a new sort of music. You can here it in some of Gershwin Music - like West side story when Classical meets Jazz meets latin rhythms.
Another is those caribbean beats where african and spanish music has combined.
Or in comtemporary music there are examples of heavy metal and rap combining.
Hip hop often takes other genres to produce new effects.
There is quite often a fusion of rock and folk in many singers music.
