If you want them to not start up automatically go to START the SETTINGS then TASKBAR then ADVANCED. Then look for STARTUP and delete the reference to that program from there.
If you just want to close them occasionally after they have begun running go to the Taskbar and right click it to get choices that include the shutdown.

Stopping programs once they are running is easy. Either right click on their icon in the system tray of your task bar (assuming it has one) and close it. For things running that aren't there you can open the task manager (Ctrl-Alt-Delete) and click on the processes tab and close things from that list.
WARNING: It isn't wise to close things down from there unless you are sure you know what you are doing.
Better yet, disable things from starting in the first place. You can not only uncheck the 'run at system startup' option from the preferences of most applications, but you can use the system configuration utility to disable even things that don't appear in your startup folder.
Click on Run... on the Start bar and type in:
msconfig
and hit enter.
Click the startup tab and uncheck everything you don't need. In general, almost everything there is safe to uncheck. At worst some hardware or software functionality will not work until you go in and check it again. If you do disable something you really need and it prevents normal bootup just boot to safe mode, run msconfig again and check the boxes of whatever you needed.
You can regain a LOT of system performance by unchecking all the extras that load with your computer. For instance all of the office stuff is just there to load up office faster. It won't hurt to disable it in the first place.

There are two steps:
1. Go to each program's preference/configuration and uncheck "Turn on automatically when window start". If program doesn't have it, skip this step
2. Go to Start-> Run -> type in msconfig
Select start up tab
Uncheck programs that you don't want to start up when you turn on the computer.
Note: there are programs for your mouse, monitor, keyboard, firewall, scanner, camera, extenal harddrive, etc. So make sure you know which program is which or your computer will be unresponsive

Those program shortcuts are usually stored in the 'startup' folder on your pc.
in windows explorer, go to the following folder-
C:\Documents and Settings\ (your userid)\Start Menu\Programs\Startup
From here, delete any shortctus there are.

Also for few other programs (ex yahoo messenger), when they start, go to the 'preference' in the program itself.... and there will be some option to 'uncheck' to run on startup.

click start, click run. in the run box type msconfig. click the startup tab. uncheck any programs you don't want to load when the computer starts up. click apply and okay to restart. be careful what you uncheck as some programs need to run when the computer starts like anti-virus programs.

Dpends on the programs. Some like quicktime and the yahoo messanger you can go into the preferences and choose for it not to start up. Not sure on other programs.
