Removing the paint without damaging the finish underneath is not possible. You will end up stripping the cabinets down to the unfinished wood. This will be a tedious job. Once stripped and sanded, they will be ready for new stain and polyurethane or varnish. I do not envy you your upcoming job.

At the very least, you should take the doors off of the cabinets since they will be easier to work on if they are not on the cabinets. If you can remove and reinstall the whole cabinets (especially the overhead cabinets), so much the better. The job will go a lot faster.

Try Zip Strip...it is a paint remover used on furniture

paint stipper will also remove the polyurethane (clear coat) under the paint too.
