The animals thing tend to be whether you're talking about individuals or talking collectively. So, you refer to species of antelope and fish etc., but you can say antelopes, elks, caribous and fishes, for example.
I disagree with sash windows, by the way - you would never say "sashes windows", but it's not actually a plural in itself.
And, like InnerGuard was saying, things like scissors, trousers and pants don't actually have singular forms - they still take the plural form of the verb (e.g. "scissors cut" rather than "scissors cuts").

yes, sheep is the plural of sheep! there are also other words such as fish...the plural is fish.

Fish can be made plural by fish if they are all of one species. ie I have twelve goldfish in my tank. If they are of different species then it is fishes. There are many types of fishes in the sea.
