White wasn't always the standard home jersey color. Other teams used to wear color jerseys for home games. For instance, the Warriors, Sonics, and Pacers also once wore yellow home jerseys.

Teams just stated adopting white as the home uniform color on their own. One possible reason why the NBA became white at home may be because it looked better on B&W television, but no one really knows why that happened.

Now, this part I'm recalling from distant memory, so I could be wrong. Whatever the reason why teams started to adopt white, at some point the league did mandate teams adopt it as the home uni color if they changed team colors or had a major uni redesign, which the Lakers just never did. They do have the Sunday home whites, but as yet have not had a major uni change that would require they drop yellow and adopt white uniforms for all home games.

I believe the Lakers wear 3 different uniforms: gold, white, and purple.

They could be using the third color for certain occasions, like for Sunday games.

It's usually specific to what the team decides. A common thing in baseball is to use an alternate on Sunday, or maybe on a night game. I can also remember when baseball teams would wear their alternate everytime a specific starting pitcher was going that night.
