Here's one I just thought of- Elizabeth Taylor played the voice of Maggie when she said "Da Da" and also played herself in the episode when they did a tribute show for Krusty.
OK, here are a few more I thought of:
Kathy Lee Gifford was on as herself with Regis and also played the woman Apu has an affair with.
Leonard Nimoy was a host for the X files episode and played himself on the Monorail episode.
Joe Mantegna (as Fat Tony, and also in one episode as himself playing Fat Tony in a TV movie)
Susan Sarandon as the ballet teacher and as herself
Does Adam West as Batman and as himself count?
Harry Shearer was on as part as Spinal Tap in addition to his regular character, but I guess that doesn't qualify as he was not playing himself...
