They are flat in order to increase the surface area that light can hit. I guess also that they take in light and use it to make energy, like plant leaves do. Cells in plant leaves contain chloroplasts which contain chlorophyl, a pigment which absorbs light. The chloroplasts are like little energy making machines for the plant.
