The reality is that people are careless with email and think that it is ok to send personal information such as credit card number, social security numbers,banking information etc in them. A Trojan that gets your email password can get analyze your email for this type of information and send it to a remote location to be harvested by the hacker.

Mainly I think it is because some people have got nothing better to do. If someone can get access to your email address it can be a stepping stone to gain access to any other accounts you may have. Some sites you register with will send you emails now and again so you could get someones user name and if you go to those sites you can usually get them to email you the password to that account and so on.
