why not show her that you like the rain too..
take a small bottle along with you everytime you go out with her. when you are with her and it rains, collect abit of rainwater everytime. when you have filled the bottle up, you can show it to her and tell her that you treasure every drop of happiness that she brought to you and you would be very honoured to just spend time with her even if it means to get drenched in the rain.

What I'd advise is that next time it rains, take her for a drive and/or at some point, kiss her in the rain.
Most women see that as being very romantic :)

not everything needs to be "talked" about.
you can "show her" that you know how much she likes the rain by inviting her to go for a walk in the rain with you, and holding her hand while you walk, making her laugh along the way, and then telling her how pretty she is - with her hair soaked by the rain...

You should tell her what she wants to hear....
depending on the circumstances and stage of your relationship, there are many things you could say to her that would just melt her....build on that question, I need a little more info before I could really even try to advise you to say anything.
