If I had to, I'd connect the two clauses with a semicolon. I'd write what you've given us as "Friday nights at the diner were always busy; I prefer the activity."
However, this is not a complete thought, since the reader's immediate question would be "To WHAT do you prefer the activity, what's the alternative?" To being alone? To NOT being busy? More information really is needed.

First:
What is the correct way to write this sentence?
It depends on the sense of the sentence. Do you mean that you currently like to hang out at the diner because it *is* always busy? Then it would be:
Friday nights are the diner are always busy; I prefer the activity.
Do you want to indicate that while others don't enjoy a busy diner, you do? Then:
Friday nights at the diner are always busy, but I prefer the activity.
Are you talking about something that happened in the past? (The two parts of your sentence don't agree in tense.) Then it would be:
Friday nights at the diner were always busy, but I preferred the activity.
