I'm wanting to know if there is a word that can represent ghosts, spirits, witches, hauntings, folklore and such things in one word?

I would agree with ellie: Though both paranormal and supernatural are close neither really best desicribe witches, folklore or inded any apsect of knowledge (magic or not) that explain or the use of supernatural powers or agencies. Occult wraps it all up in 1 very neat word - as explained below:
Occult - pertaining to magic, astrology, or any system claiming use or knowledge of secret or supernatural powers or agencies and is beyond the range of ordinary knowledge or understanding.
Paranormal - pertaining to the claimed occurrence of an event or perception without scientific explanation, as psychokinesis, extrasensory perception, or other purportedly supernatural phenomena.
Supernatural - pertaining to, or being above or beyond what is natural; unexplainable by natural law or phenomena; abnormal.

I'd go with the Paranormal, except that you put folklore into the mix. You really have a widespread grouping there.
