It's natural to try a few different hairstyles until you find something you like and decide to stick with it. For men, this can include facial hair. I'm not into the full beard, nor the mustasche, nor the goatee. Is a 5 o' clock shadow unprofessional if thats what I like best?

Oh!You have had a lot of personal opinions, mine is NOT! Depending on what you do for a living, a 5 o'clock shadow is acceptable. For some men it is fashionable. Only you know what you look like with it, and as far as anyone should feel - it is YOUR decision. Make your decision on the LOOK, not on other people's comments or preferences.

Professionally a 5 o' clock shadow makes you look as if you are weary, not able to keep up with your responsibilities and teetering on the verge of burnout. You don't look as if you are managing your job very well and you don't seem to think of your professional appearance as being rather important.
Socially you do not look approachable with the stubble look. There are not many women who want to rub their hands or delicatae face against a man and feel the roughness of a two, three day old beard.
You should either grow a beard during your two week vacation and keep it well-groom afterward or remain clean shaven. You can shave in the shower and it takes less than five minutes. Another option if you are weary of shaving you can have cosmetic surgery to eliminate facial hair permanently.

I think this is unprofessional. But many people think I am narrow-minded. I also happen to think guys wearing earrings is unprofessional, but I had a young guy, about 25, come to interview with me once wearing one. The interview was over before it even started.
The bottom-line is you don't want to do, say or appear in any way questionable on things like this. If in doubt, take the more conservative approach. If you want to display your rugged individualism, go lead nature hikes for a living.

A 5 o'clock shadow just isn't a good look for business. It makes it appear that you rolled out of bed and didn't have time to shave. Save the look for the weekends, if you must go with it. Otherwise, either go clean-shaven or grow a beard or mustache. The in-between look is just sloppy looking.

I think it does depend on your profession... if you are a doctor, lawyer, teacher, or other type of "white collar" professional, I think it may be a bad choice.
However, if you are a hairdresser, mechanic, truck delivery driver, or something where you have a little more freedom, I think you should go for it!

While it seems to be a fashionable trend, I personally think it looks frumpy and lazy. I'm speaking for myself, of course, but I would be less inclined to take a man seriously who cannot manage to shave himself in the morning, fashionable or not.
