"Recent documents" is a folder (hidden) that you can find in c:\documents & settings\ user (your login id).
in order to be able to see this folder you have to change the option in the folder options.
to do that open any folder, go to Tools, Folder Options, select the View Tab and select Show hidden files and folders.
To show your most recently used documents on the Start menu
Right-click the Start button, and then click Properties.
On the Start Menu tab, click Start menu, and then click Customize.
On the Advanced tab, select the List my most recently opened documents check box.
The next time you click Start, the My Recent Documents folder is on the Start menu. This folder contains the documents and files you opened recently.
Note
On the Advanced tab, click Clear List to empty the My Recent Documents folder. This does not delete the documents from the computer.

If the other way above doesn't help, do a search for filename "*" and set the date range for date last modified for the period you're looking for in the advanced search.
This will go back further than the recent files but will only show files that have been modified.
If it is a particular file type e.g. a word file (.doc), you can normally see the last few opened files in the bottom of the file menu when you launch the application.
