Double vision is a brain problem more than an eye problem so yes you can get double vision if you had only one eye.

According to wikipedia... yes you can.
"Diplopia can also occur when viewing with only one eye; this is called monocular diplopia, or where the patient perceives more than two images, monocular polyopia. In this case, the multiple vision can be caused by a structural defect in the vision system, such as cataracts or subluxation of the lens."
Makes sense that if you got double vision from one eye that it wouldn't be a problem with your eyes but rather with your brain's ability to interpret what your eyes are sensing.

errr ... how about no?
only one eye means there is only one set of images being uploaded into the brain, and therefore it is impossible to get double vision, it is however possible for that eye to go out of focus
