Does your vegetarian eat fish? - if so, I bought some great ones from my local fishmongers at the weekend. Sweet and sour prawns with rice, and prawn crackers!
I have done kebabs before, in a honey and mustard sauce, and made up a variety of meat / non meat ones.
Stir frys are a good option - although means you have to spend some of the time in the kitchen, getting it cooked.

a favorite at my table is chicken catalan
1 6oz chicken breast skin on pan fried
4oz new potatoes boiled then roasted in olive oil and thyme
chorizo sauce
200g chorizo
125ml white wine
120ml chicken stock
200ml double cream
5g garlic chopped
10g mixed italian herbs
place stock, cream and wine in a saucepan and reduce for 5 minutes.
add garlic and herbs and reduce again for 2 miutes
add chorizo and cook for 8 minutes
voila

i generally cook a variety of smaller courses -- more like tapas -- then people can eat what they want and everyone can get drunk on cheap wine too. it keeps you from putting something someone doesn't eat on a plate in front of them and avoids other tricky situations. there are lots of recipes at foodtv.com -- like every show ever on food network -- have fun!

ha ha they should be grateful for the invite..know how you feel when it comes to cooking for other people!! why not recall dishes you've had at restaurants and try them......prawn cocktail,garlic mushrooms,garlic bread,soup for starters.....jacket potato (with a variety of toppings),cauliflower cheese,pasta,tuna fish bake,etc for main course and a choice of dessert.GOOD LUCK

get a vegetarian book (rent it out from the library...or even look on line...) and see what types of foods are Vegetarian's favorites...I know they love tempeai (I don't know how to spell that one...but it is like tofu meat style...good!!!)

You could start with a cream of moshroom soup.
for the main A Veg flan with baby new pot's and baby veg,
and as a pud, a fig tart, with Ice cream.

make platters. like vegetable platter, meat with cheese platter, different cheeses and crackers, and fruit platter with pineapples and cantelopes it is easier faster and good.

find out if your vegetarian likes chicken. if so you can make fry chicken bake chicken, steamed veggies , rice or potatoes and a nice salad .
