You gotta teach him how to do it.
Normally kittens learn what they need to know about the world around them by watching their mother. It is possible that he didn't really 'get' the whole kitty litter thing if there were other cats cover his poop up for him. But at 7 weeks it is a bit too young to really tell.
Showing him how to cover up his poop will help. He may not learn straight away (he is still young), but you can be sure he'll get it one day.
Never ever force your kittens face in the poop or lock him in the room with the poop or scorn him for not covering it up. The only thing that'll teach him is to be scared of using the kitty litter and will start going around the house in places you won't be able to find for weeks. Your entire house will become one giant poop garden.
Positive reinforcement, patience, a pooper-scooper and air freshener are the keys here.
When the kitten leaves the room where the kitty litter is, remove the poop from the tray and dispose of it immediately. Then spray air freshener and open a window. Avoid feeding him chicken mush or cheese, as this often smells worse when it gets 'processed'; and make sure you're not giving him too much milk.

Since it is just a 7 week old kitten he hasn't learned what to do yet. The best way to teach him is when he is doing his duty, go up to the litter box take his paw and push the litter over the poop or even pee. Always tell him what a good boy he is so that way he'll connect the two. He wont learn the first time you do it, so you'll need to do it for a while afterwards too.
When we had kittens, they did the exact same thing, just poop and walk away. When I finally showed them how to do it and gave them positive feedback they picked it up. They are 5 years old now and they always cover there poop. :-D

Your kitten is too young. You may want to help him learn faster? Show him what to do a couple of times. And it seems a bit strange that a 7-week-old kittens poop should be as smelly as you describe it - check his diet.

Clean the litter box as soon as he gets out of the kitty gritty. Spray a little air freshener when he's not in the room, just don't tell him off for doing it otherwise it will put him off & you'll find poop elsewhere in the house. We have a cat who just still leaves it out & proud so I just figure I gotta clean it up. Sometimes the other cats will cover it hahah

The best solution is to throw the poop away as soon as he does it. It would smell even if he buried it, until it dries out. You can teach him to bury it perhaps if you help him bury it by showing (softly move his paws to bury the pee or the poop). But it is more hygienic to remove it, it prevents infections, bacteria, etc, not only the smell.

While it is instinctive for your cat to bury his wastes, it can take some time for him to learn to "aim" properly as he digs, so try to be patient. In the meantime, if you're around when he uses his box, go ahead and scoop it out and dispose of it; also, a good quality scented litter helps. Of course, be sure to clean the box daily, and to add new litter as needed.

first off, what are you feeding him that his poop is THAT bad. Consider Natural Choice Complete Care indoor Kitten formula dry food.
give your kitten time it is instinct to burry their waste, maybe his mom didn't have time to show him the instinct should kick in evenutally.
