Egg white is high in protein, having a complete amino acid profile, same as milk. Ever heard of bodybuilders eating lots of egg whites? They just want to ingest lots of protein. Not food compared to the yolk? Don't post if you don't know.

The yolk contains the nutrients in the egg, but is also high in cholesterol. Therefore it is sometimes discarded by the health-conscious-to-the-point-of-paranoia, and thus we have omelets made with one egg blended with a few egg whites, and such.

It's like the difference between the nutritional value of a vegetable sandwich and the paper bag. One is pure food the other is not. The albumin (white) is not food when compared to the yolk.
