Pan Broiled Lamb Chops Recipe
A simple marinade gives these lamb chops an elegant taste.
Ingredients
- 8 medium lamb chops (more if very small)
- 1 teaspoon finely chopped fresh rosemary (substitute 1/2 teaspoon dried )
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic
- 1/2 cup water or wine
Container: 12 inch heavy bottomed skillet
Servings: 4
Prep Time: 1 hour
Cook Time: 15 minutes
Directions
* Trim all excess fat from 8 to 12 (depending on their size) lamb chops.
* Prepare the marinade: Chop the rosemary and mince or press the garlic. Using a mortar and pestle, or small bowl and the back of a spoon, mash together the chopped rosemary and pressed garlic.Add soy sauce and olive oil. Rub this mix all over the chops and let stand 1/2 hour to 2 hours.
* Lightly film a skillet with canola oil over medium-high heat. Pat the chops dry with a paper towel - they won't brown well if they aren't dry.
* When the pan is hot (a drop of water sizzles and evaporates instantly), add the chops without crowding. (Cook in two batches if they would otherwise crowd the pan.) Cook at medium-high heat for 2 or 3 minutes, or until browned. Turn chops and brown the other side for 2 or 3 minutes, then reduce the heat to medium until the chops reach the desired doneness. Depending on their thickness, this may take an additional 3 to 10 minutes.
* Check for doneness by making a small cut into the meat. They will taste best if cooked to medium or medium rare.
* Remove the cooked chops to a warmed platter and cover. Add 1/2 cup water or wine to the pan, cooking and stirring until all the browned bits are loosened and the volume of liquid is reduced to about 1/2. Pour this sauce over the chops and serve immediately.

I say go grilled any time you can, it's absolutely scrumptuous and healthy too. Here's a simple recipe for grilled lamb chops:
Trim excess fat from chops. Combine softened butter, parsley, salt, pepper, and paprika in a small bowl, stirring until combined. Stir in lemon juice. Spread butter mixture evenly over chops.
Grill chops over medium coals 5 to 6 minutes on each side or until desired degree of doneness.

Lamb Chops with Mint and Mustard Dipping Sauce
2/3 cup extra-virgin olive oil, eyeball it
2 cloves smashed garlic
12 loin lamb chops, 1/2 to 3/4-inch thick each
Salt and pepper
3 rounded tablespoons prepared grain mustard
2 tablespoons white wine vinegar
1 tablespoon honey
1/4 cup mint leaves reserve 4 leaves for garnish
4 leaves radicchio lettuce
Preheat broiler to high. Place garlic in a small saucepan and add 2/3 cup oil, to cover. Heat oil and garlic over low heat for 5 minutes. Remove oil from heat. Arrange lamb chops on broiler pan. Drizzle 3 teaspoonfuls of the garlic oil over the lamb and spread the oil over the chops with a brush to coat evenly. Season chops with salt and pepper, to taste. Set aside.
To a food processor or blender, add mustard, vinegar, honey. Turn processor or blender on and stream in remaining garlic and oil. Turn the processor or blender off and add mint to the container. Pulse and grind the dipping sauce to incorporate the leaves.
Broil chops 3 minutes on each side, then let them rest up to 10 minutes for the juices to distribute. The lamb will be cooked to medium. Serve 3 chops per person with dipping sauce portioned in radicchio leaves along side the chops. Garnish with sprigs of mint.

Rub in some salt and pepper and slice up some raw garlic cloves and pierce the chops and insert garlic slivers into the piercings and then smear the chops with Guldens Spicy Brown Mustard and quickly broil or grill them. They are fantastic!
