Best Baked Catfish

Ingredients :

1cupParmesan cheese grated
1/2cupflour
1/4tspseasoned salt
1/2tspblack pepper
1tsppaprika
1xegg beaten
1/2cupskim milk
6xcatfish fillets
1/4cupbutter melted
1xclove garlic crushed
paprika and black pepper

Method :

* Mix well first 5 ingredients. Separately, mix well egg and milk. Dip fish in egg mixture; dredge in flour mixture. Put fish in greased 9x13-inch baking dish. Saute garlic in butter for 2-3 minutes; drizzle over fish; sprinkle with paprika and pepper; bake at 350 degrees for 40 minutes or until fish flakes.





Alaska Cod with Greek Walnut Salsa

Ingredients :

6xcod fillets - (6 oz ea) thawed
Salt to taste
Freshly-ground black pepper to taste
Oil as needed
GREEK WALNUT SALSA
1 1/4cupfinely-chopped tomatoes
1/2cupfinely-chopped cucumbers
2tblfinely-chopped olives
2tblfinely-chopped red onions
1tbllemon juice
1tspolive oil
1tspchopped fresh parsley
1/4tspminced garlic
1pchdried oregano
1/4cupchopped walnuts toasted

Method :

* Season cod fillets with salt and pepper. Saute in oil in a non-stick or heavy saute pan over medium-high heat until fish just flakes when tested with a fork.
* To serve, divide cod between serving plates and top evenly with salsa.
* Greek Walnut Salsa: Mix together all ingredients except walnuts until well combined. Season with salt and pepper; stir in walnuts just before serving.
* This recipe yields 6 servings.

Take any white fish like haddock or cod, clean and dry it, and lay it a shallow baking dish. put some white cooking wine (just a splash or so) into the bottom of the dish. Sprinkle a layer of breadcrumbs over the fish. Put Put a few pats of butter on the top layer to make the breadcrumbs crispy and golden brown. Bake at 350 or so until fish is tender and flaky and the breadcrumbs are golden brown. The liquid in the bottom of the pan should be bubbly. You could also add some garlic to spice it up, but not too much, its a delicate dish. Wicked easy and goes with anything.

6 (4 ounce) fine-textured fish fillets (such as flounder, sole or cod)

Variation: Substitute boneless skinless chicken breast halves for fish. Decrease oven temperature to 400 degrees F. Bake 15 to 20 minutes or until chicken is cooked through.

I don't know what country of origin you're from. I am Sri Lankan and this is my own recipe.
Ingredients: 1/2 kg. Seer fish, 30 gms Red onion, 4 Green chillie, 1 big riped romatoe, 4 red dried chillie, 1 tlblspn. Ginger/Garlic paste, 1/4 tspn each of Dil seed, mustard seed, cummin seed, 1 sprig of curry leaves and a pc of lemon grass, tamarind juice and salt to taste, 3 tblspn. chillie power, 1 tblspn. coriander power(mixed masala powder), veg.oil.

Heat oil in a pan and put mustard, cummin and dil and when it splits, add ginger/garlic paste and stir well and then add onion, g.chillie, dried red chillie, curry leaves/lemon grass and stir well. Then add the cut tomatoe pieces and fry till oil comes on top. Now add the tamarind juice salt, add chillie powder and the coriander powder and add little water as you require the gravy and mix well in the pan. Now add the fish and simmer till fish is well coated with gravy.

Brush with olive oil, top with thin slices of lime and jalapeno peppers, and grill, broil or bake until it flakes easily with a fork.

Or, if you have really firm filets, try the recipe we use on the Gulf Coast for "Trout Laguna": marinate the filets in green (jalapeno)hot sauce for about an hour, dredge in flour, and saute in olive oil in an iron skillet.

Get some bonless white fish.. cut it in 1.5 inch wide and 4 inch long pieces ( or there abouts)... batter and fry...

IN the mean time.. have some fresh warmed corn tortillas, shredded cabbage, and lime or lemon waiting.. if you like maybe a thin ranch dressing too..

Assembly: Two tortillas layer together, one piece or fish, some cabbage, a squeeze or citrus, and a squirt of dressing.. mm mm good.. enjoy fish taco.. ,

I like to use tilapia filets. They are very mild and readily available in the US now, can even get them at Sams club and Costco.

Couple easy ways to prepare them.

spray a baking dish with pam. put filet in, skin side down. cover with a light mixture of mayo and dijon mustard, sprinkle with parmesan cheese. bake at 350 for about 20 min or until flaky.

or cover with a mix of olive oil, chopped garlic, and chopped olives.
