Low-fat Pie Crust
Very easy and delicious. Crust can be rolled out a second time if necessary and it won't get tough.
Original recipe yield: 2 pastry crusts.
INGREDIENTS:
2 3/4 cups sifted all-purpose flour
1 teaspoon salt
1/2 cup vegetable oil
1/2 cup milk
DIRECTIONS:
Mix flour and salt together. Pour milk and oil into one measuring cup, do not stir, and add all at once to flour. Stir until mixed, and shape into 2 flat balls. Wrap in plastic wrap. Refrigerate for 15 minutes or more.
Roll out on lightly floured surface.

for a 2 crust pie
2/3 cup plus 2 tbsp shortening or lard
2 cups all purpose flour
1 tsp salt
3 tsp cold water
1 tsp vinegar
cut shortening into flour and add salt until coarse crumbs.
Sprinke in the cold water and vinegar, a tsp at a time.
Just until flour is moistened and the pastry is almost
clean from the bowl. You can add 1 tsp more of water.
Then roll it our to shape for your pie plate.
For a filled crust, flute edges.
The trick is not to work the dough to much. And if you
use really cold water it seems to help.
Good luck with your peach pie.

I was about to answer until I saw the non-flaky part. If you don't want a flaky crust, maybe you should make a cobbler instead.

This is a tried and true recipe that I have made for years. It works with any type of peaches. I hope that you enjoy it as much as my family has.

INGREDIENTS:
1 cup all-purpose flour
1/2 cup brown sugar
1/2 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
3/4 cup milk
1/2 cup margarine, melted
1 (29 ounce) can sliced fresh, frozen, or canned peaches, drained
1 teaspoon ground cinnamon
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, combine flour, sugars, baking powder, salt and vanilla. Pour milk into dry ingredients and then stir in melted margarine. Mix thoroughly.
Pour mixture into a 9x13 inch baking pan. Arrange peaches on top and sprinkle with cinnamon. Bake in preheated oven for 30 minutes.

on your pie dough, the longer that you mix it, the tougher it will be, and you will not get the flakeyness that you don't like. Instead of just mixing until moist, mix longer with a fork... hope this helps also
