Bacteria, and this is the biology behind septic tanks. There are aerobic bacteria and anaerobic bacteria, the first need oxigen to multiply, the second do not. The best environment for bacteria is warm to hot which is why in ecuatorial rain forests everything decomposes so fast, you have heat and humidity (oxygen) which gives aerobic bacteria the ideal breeding environment.

SIZE REDUCTION, CIRCULATION OF AIR/ LEACHATE (as the case may be) enhances the rate of decomposition as they provides more contact area, balance in bacterial population.
