They can't eat any food, spice, etc. that might have been cross-contaminated with gluten from wheat, barley or rye. Oats don't have gluten in theory, but since they're almost always cross-contaminated (stored in the same silos, processed in the same plants), oats are not safe for celiacs. Even personal care products must be safe. Celiacs will react to even the tiniest traces of gluten. They also have to be careful with dairy, since many people cross-react to the dairy protein casein.
What CAN they eat? Most everything else! Fruits, veggies, meats, fish, rice, potatoes, special gluten-free breads and pastas, etc. It's tough being so strict with your diet, but it's much, much better than poisoning yourself!
Celiac.com has a lot of good info as well as a message board community.

A person with celiac disease should not eat most grain, pasta, cereal, and many processed foods.
People with celiac disease must avoid gluten for the rest of their lives. Eating any gluten, no matter how small an amount, can damage the small intestine.
The best thing for you to do is obtain a referral to a dietian.
A dietitian is a health care professional who specializes in food and nutrition.

Any foods without gluten like potato flour, rice flour products and soy flour products. Avoid wheat. There are products made now that state they are even for people with this problem. I bought some crackers recently at the health food store made by Blue Diamond that were delicious. I don't have this disease but sometimes I avoid eating wheat.

They make alot of wheat free foods now. You can find many in most supermarkets. I had a friend who used to go to Celiac summer camps too.
