Why don't you develope an interest in what interests her.If you really like someone you should get pleasure out of seeing them get excited about those things that interest them. My ex taught me like to baseball, it excited him.......now I like it. I got one now totally into football.....I don't know a damned thing about football but would love to learn.....seeing him excited about something excites me.......see how it works. Now if more people thought that way it wouldn't matter what we had in common, people expose us to more things so we grow....

Find out what she's reading about all the time. Ask her to show you around or teach you about something she's read. If she feels like she's in the spotlight, she may really shock you with some hidden passion for something. Make her in charge of the next date. She'll probably research places & find something really fun to do. It sounds like she definately does her homework on a subject!

Take her bowling or something, where you can laugh together, she'd be nervous as anything! So take that into consideration, shes probably not boring she just dosnt know what to say to you either! Activites are the best way to open up someone, so maybe take her to the pool, movies use your head!

go for a walk in a park,,, take along a small picnic lunch,,,
you can still see each other even if she goes to another school,,,you should be honest with her tell her how you feel,,, and tell the truth,, maybe you can get to like some of the thing's she likes and vise verse,,,

Ask her for her phone # and then call her. Start up a conversation about maybe what you did over the weekend and then ask her what she did that weekend. Maybe then ask her what else she like to do in her free time. Something like that.

you really need to be more open to new things, if you want to have a relationship with her. people are usually more attracted to other people who are interested in trying the things that they like to do; even if they dont end up liking those things, at least they put in the effort.
