I work in a restaurant, I am not sure where the regulation is, but it is probably part of the health code that food must be covered. You could probably find it in a rule book or something. Most likely it is to keep out dust and bugs. Also some foods will dry out or just get plain nasty.

Its probably in the Haz Com book which should be located somewhere on the wall near the office, normally. You can always ask your boss. OSHA has all kinds of regulated rules for situations like this.
There are so many reasons why his has to be done.
Air borne illness... spilled chemicals... bugs... on and on
