Because a quiche is mainly made up of egg, if you were to freeze it, would it still be O.K. to eat once it was then thawed out again, or would it make you sick?

You can freeze almost anything. Just make sure, when freezing your quiche, it is stored in an air tight container so it doesn't get freezer burn.

Thaw it out before reheating.

You can freeze a quiche. Why would freezing eggs matter? Dairy can quickly go bad if left at room temperature, but since you're freezing the quiche there's no increased risk of spoiling or contamination.

I like to serve a simple green salad with quiche. Just some fresh lettuce with a vinegrette made with olive oil, the juice of a couple of cloves of garlic, and some fresh squeezed lemon juice. Of course you can add something more to the salad, but if you use good quality ingredients, you can do well with just a few simple things. Don't get complicated, just use the best produce and Extra Virgin Olive oil that you can find.

yes,, I make extra from my main one. I use muffin cups, and spray with pam, so no crust. I freeze them after popping out of the muffin pan. then put into a ziplock bag for a quick breakfast or snack..I'm the only one in my familly who likes quiche, so this is my solution. hmmm maybe I'll make some this week, with frozen SPINACH, since I'm having withdrawal not being able to get any fresh bagged spinach!

Look in the frozen food section for breakfast stuff and you just might see they have quiche. I've put it in the freezer before and heated it in the microwave, didn't get sick.
