I opened up a bottle of soy sauce and used it for cooking, but didn't notice that it says to refrigerate after opening. I've been using for the last month and haven't suffered any ill effects. I've put it in the fridge since, but is the soy sauce ruined now?

Soy sauce contains a lot of salt so it should be OK without refrigeration. Manufacturers of this type of product will tell you to refrigerate just to cover their asses.

Things like ketchup and other sauces however will vary in their ability to stay fresh. These days more consumers demand less chemical additives so this means that there may be less preservatives in there, so you must refrigerate. This is especially so if you spoon it out or even worse, use your fingers!

Beware - mayonaisse and soft cheese sauces are the most dangerous!

My family hasn't refrigerated Soy sauce in generations (well, 2 generations, lol). I'd guess it's just a sop to the lawsuitin' masses to keep from being liable if anything ever DID happen.

I dont put soy sauce in the fridge it should be ok to still use. Just going to check if mine says that now

Soy sauce is like ketuchup and mustard,why do resturants leave them on the table and "marry " them?I don't know how old these things are on th bottom of the jar.As long as it doesn't have dairy in it I think it's okay.Soy sauce is like vinegar,I think.If it tastes rancid,spit it out,and buy a new bottle.

no, any soy sauce does not need to be Refrigerated. Its just to keep it cold... Keeping it in a room temp is better

Soy sauce is one thing I have never refrigerated (my mother never did ether) As far as I know it has never effected the taste and never gone sour.

no, you'll be fine, used soy sauce for years and didn't realize you were suppose to put in fridge after opening it..didn't bother me

look at your bottle of tomato sauce it's says keep refrigerated after opening who does that who wants cold sauce on their hot food it's stupid.

once i noticed that it said that i would have tossed it out, its a bit too late now but i would stop using it and get a new bottle, which after i open i would put straight into the fridge.

It is refrigerated to keep the taste as things get old they start losing taste
