Soy sauce contains a lot of salt so it should be OK without refrigeration. Manufacturers of this type of product will tell you to refrigerate just to cover their asses.
Things like ketchup and other sauces however will vary in their ability to stay fresh. These days more consumers demand less chemical additives so this means that there may be less preservatives in there, so you must refrigerate. This is especially so if you spoon it out or even worse, use your fingers!
Beware - mayonaisse and soft cheese sauces are the most dangerous!

My family hasn't refrigerated Soy sauce in generations (well, 2 generations, lol). I'd guess it's just a sop to the lawsuitin' masses to keep from being liable if anything ever DID happen.

Soy sauce is like ketuchup and mustard, why do resturants leave them on the table and "marry " them?I don't know how old these things are on th bottom of the jar.As long as it doesn't have dairy in it I think it's okay.Soy sauce is like vinegar,I think. If it tastes rancid, spit it out,and buy a new bottle.
