Cajun Cafe's Bourbon Chicken
1 lb. Chicken leg or thigh meat Cut in bite size chunks
4 oz. Soy sauce
1/2 C. Brown sugar
1/2 tsp. Garlic powder
1 tsp. Powdered ginger
2 Tbsp. Dried minced onion
1/2 C. Jim Beam Bourbon Whiskey
2 Tbsp. White wine
Mix all the marinade ingredients and pour over chicken pieces in a bowl.
Cover and refrigerate (stirring often) for several hours (best overnight). Bake chicken at 350 for one hour in a single layer, basting every 10 minutes. Remove chicken. Scrape pan juices with all the brown bits into a frying pan. Heat, and add 2 Tbs. white wine. Stir and add chicken. Cook for 1 minute and serve.

Grilled Bourbon Chicken

Ingredients


1/2 cup soy sauce
1/2 cup firmly packed brown sugar
1/3 cup bourbon
2 tablespoons dried onion flakes
1 teaspoon ground ginger
1/2 teaspoon garlic powder
3 pounds fresh whole chicken, cut up


Directions


In a large bowl, combine soy sauce, brown sugar, bourbon, onion flakes, ginger and garlic powder. Set aside ½ cup of the sauce for basting purposes. Add chicken to bowl, tossing to coat evenly. Cover and refrigerate for at least 2 hours.

Brown cut-up chicken in oil in a skillet; remove and place in a baking dish.

Cover with foil or lid and bake for 1 hour at 325°F., or until the chicken is cooked.

Bourbon Chicken

A favorite named after Bourbon Street in New Orleans, Louisiana and for the bourbon whiskey ingredient; although this dish, sold as Cajun-style cuisine in malls all over America, is reported to be nothing of the kind (not genuine Creole or Cajun fare)! Note: If you double the recipe, make sure that the chicken is still in a single layer. Laissez les bons temps rouler!
Original recipe yield: 4 servings.

INGREDIENTS:
4 skinless, boneless chicken breast halves
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons dried minced onion
1/2 cup packed brown sugar
3/8 cup bourbon
1/2 teaspoon garlic powder

DIRECTIONS:
Place chicken breasts in a 9x13 inch baking dish. In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in refrigerator. Marinate overnight.

Preheat oven to 325ºF (165ºC).

Remove dish from refrigerator and remove cover. Bake in the preheated oven, basting frequently, for 1-1/2 hours or until chicken is well browned and juices run clear.

CAJUN BOURBON CHICKEN

1 cup bourbon
1 cup soy sauce
1/2 cup brown sugar
1 tsp paprika
pinch hot red pepper flakes
1 tablespoon molasses
3 cloves garlic, smashed
2 tablespoons freshly grated ginger
1 1/2 teaspoons each onion and garlic powder
6 each chicken thighs and drumsticks
salt and pepper, to taste

Combine all ingredients (except chicken) for marinade (may be processed in a blender). Set aside 1/2 cup of this marinade in a clean jar (do not use to marinate chicken - this portion will be used for basting the chicken during the grilling). Keep refrigerated.

Put marinade into a ziploc bag with chicken pieces and distribute evenly. Marinate chicken for 6-12 hours in refrigerator, turning occasionally.

Remove chicken from marinade and drain. Allow to sit at room temperature while grill heats up. Grill over medium high heat (grill open) for 5 minutes, then close grill and reduce heat; continue cooking over low heat, for 15-20 minutes, or until chicken is done (juices will run clear when pierced with a fork). Baste with fresh marinade every few minutes, turning chicken to cook both sides evenly.

Season with salt and pepper, to taste.

I would experiment. buy a whole chicken. use a fork to puncture plenty of ports to allow bourbon seep in. place chicken in deep pan or pot, pour your bourbon in. cover it and place it in frig perhaps 4hrs. bake as normal. while baking use a concoction of your favorite BBQ sauce and mix some bourbon in to your liking. and at the last 20 min of baking, baste the chicken with the sauce. That sounds good right about now.
