Hey, my girlfriend's a vegetarian, and I'd like to know how to cook her a few nice things. Please help if you can!

It is my favorite, so delcious !

Baked Corn

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

We are currently stationed in Korea, where we discovered a wonderful dish they call Bimbimbap. Basically, you steam plain or brown rice, or even a mix- or you can use leftover rice, reheated- just enough rice for each person. You stir fry whatever veggies you have on hand, usually to include shredded cabbage, carrot, bean sprouts, etc. You also dry fry cubes of firm tofu, to add a bit of protein. They fill the bowl with rice, and then arrange the veggies on top, putting each veggie in a different place. For home cooking, they just stir it all up together and put it on top of the rice. For egg eating vegetarians and meat eaters, you top it off with a fried or poached egg. It's basically just artfully arranged fried rice- but is a good filling meal all the same. To save prep time, I use a package of the broccoli slaw, and whatever sad veggies I find in the fridge. Though it usually also includes spinach, at the moment that's pretty much out of the question, unless you use frozen and thaw it out. You can find a multitude of recipes for it on the net, check out SOAR for a few. The other great thing about this dish is that if you have a meat eater at the table, you can cook up whatever meat you'd like or have leftover, and serve that on the side. A nice bowl of miso soup with udon noodles on the side, and you're left nice and full.
The other veggie dishes we enjoy is a vegetarian lasagna, substuting eggplant cubes, sauted, for the meat. Also you can add the broccoli slaw to the marinara sauce to up the veg count- or whatever veggies you prefer. Beyond that, a vegetarian chili, made with multiple types of beans instead of meat, the basic recipe otherwise is the same. Pasta primavera is also nice, with a good hunk of garlic bread alongside. My girlfriend is also a veggie. I cooked this for her on our first date and she loved it. We've been together for a year now and we're getting married, so this is a winner!

4 big peppers (1 green & 1 red is a nice combo)
1 packet of button mushrooms
1 big onion (chopped)
1 packet minced Quorn
oregano
ground black pepper
cheese
rice




So, take the stalky bit off the pepper and clean out the inside. Put peppers in a deep ovenproof dish and soak with hot water from the kettle for about 5 minutes. Then drain them off.

In a saucepan, put a large knob of butter, and a good drizzle of olive oil. fry the chopped onion on a very low heat, to soften them up. Pile in some black pepper (freshly ground) after about 10-15 minutes add a bag of minced quorn. Continue to cook on a low heat for a good 10 minutes then add some oregano and the mushrooms. leave it on a low heat and continue to cook slowly for another 10 minutes but keep stirring. REMEMBER the mixture will be fairly dry. When you are happy with it. Spoon it into the peppers. Now make a big sausepan of cheese sauce. and pour over the peppers and stick in the oven on 200 for about half an hour. Now cook up some white rice to lay as a bed on the plate. Serve the peppers on the rice and happy eating.

Here is a really easy one: chop some vegetables like tomatoes, peppers, courgettes, onions, butternut squash and place on a baking tray, add whole cloves of garlic left in their skin and drizzle with olive oil. You can also add sprigs of herbs like thyme or rosemary and Hilloumi (Greek cheese for baking and BBQs). Pop in the oven for about half an hour to fourty minutes by 180-200 degrees.
Put a cup of couscous in a saucepan and add the same amount of boiling hot water (just boil it in the kettle). Add some olive oil and salt and place lid on top. Let it rest for about 5 minutes until all water is absorbed. Add a knob of butter and give it another stir. Do not place it on the hob!!! It does not need any extra heat so prepare the couscous towards the finishing stages of the veg in the oven. Serve with a little natural yoghurt mixed with some Tahini (sesame paste) and some lemon juice. It is absolutely delicious and practically cooks itself. Good luck!

Well, aren't you sweet! You don't say how strict of a vegetarian she is, it's a lot harder to find recipes for vegan eaters than those who do eat dairy/egg/fish.
Pasta- there are a lot of good pasta and rice dishes that are vegetarian and you can get pasta that is egg free if you need to.
Good old Spagetti with Marinara, garlic bread and salad is always a great meal, pasta primavera, eggplant parmesan, etc-here are some recipes : http://www.ilovepasta.org/recipes/meatless.html
Also Asian or Cajun have a lot of vegetarian choices, a good vegetable stir fry with rice or noodles, spring rolls or spinach wontons with a dipping sauce and cookies & fruit for dessert:

A Cajun or Caribbean meal might include a vegetable Jambalaya or Red Beans and Rice or Maquechoux (this is wonderful!), Fried Plantains, and a fruit salad or sweet potato pudding.

Egg plants sliced and layered in a baking dish layered with cheese and chopped tomatoes and seasoning to taste. Then bake until brown and crispy - not burnt!
Also stuffed mushrooms - scrape out the insides and pull out the stalk - be careful not to ruin the actual mushroom shell as you need to stuff it. Cut up the stalks and mix with breadcrumbs, spring onions and the brown bits from the inside of the mushroom - Mix it all together in a wok and add grated cheese if you want. Use this mix to stuff your mushrooms and then top with grated cheese and put in the oven for about 20 mins depending on how hot - i usually set it to 200.

Vegetarian Chili, easy and taste great!
1 can black beans drained, yellow squash cut into Small chunks, chopped onions 1 med size, 1 Small green pepper, and any other veggies you like,1 can stewed tomatoes(mashed up) add .5 can water, 1 cup salsa med or hot.
saute onion till soft,add tomatoes,water and veggies,cook till done add the rest of recipe simmer 10 minute and go.

I have quite a few, but my favorite is something of an appetizer. It's a pain in the butt, and makes enough to feed an army, but I've never known of a drop of it to go to waste. It's called Georgia Caviar. I got it out of the Health Food section of a local newspaper. Here goes:

GEORGIA CAVIAR

1 pound dried black-eyed peas
2 quarts water
2 cups low-fat Italian dressing
2 cups diced green bell peppers
1 & 1/2 cups finely chopped onions
1/2 cup diced jalapeno peppers
1 jar (2 ounces) diced pimento, drained
1 tablespoon minced garlic (I use more)
Pepper to taste
Lite tortilla chips (Fritos Scoops work well, too)

Soak peas in 2 qts. water overnight. Drain peas and place in large saucepan. Add enough water to cover peas. Bring to a boil; reduce to simmer and cook 40 minutes over medium heat. Drain.

Pour Italian dressing over peas; cool. Add bell pepper, onions, jalapeno peppers, pimento, garlic and pepper; toss. Refrigerate 24 hours.

Serve at room temperature as a dip with tortilla chips.

Per serving: 141 calories, 8 grams fat, no cholesterol, 135 milligrams sodium.

I love risotto and even my carniverous dad likes it.
Saute leeks in butter and olive oil, then once softened cook rice (proper risotto stuff- Ariborio is probably the easiest to get) for 2 mins, add a glass of white wine, then keep adding veg. stock gradually, stirring all the time, until the rice is cooked.
In the mean time cook mushrooms and asparagus in a pan (or whatever veg you prefer).
Add veg to rice, big helping of parmesan, season to taste and serve with a big pile of rocket on top.
It is much easier than it sounds and looks, and only use the packet instructions for weight of rice per person, ignore the rest and add fluid gradually and stir all the time and it will be worth your while!

Lemon and garlic vegetable kebabs (on skewers) are gorgeous - peppers, onion, mushrooms and courgettes (and any other veg u fancy) chopped into chunks and put on skewer, leave in a dish of lemon juice and crushed garlic (no particular amounts, just lots of both - and juice from real lemons) for bout half an hour, then barbecque - mmmm
