Sometimes I make omelettes for dinner out of anything I can find.
It would be like: 3 eggs, 2 cloves of garlic, a little bit of chopped onion, and a tomato and some crumbled up queso fresco.
Or tuna and macaroni salad: a can of tuna, 2 cups of cooked macaroni, and some miracle whip.

I made this really good soup that is cheap to make/really healthy. The soup has frozen mixed veggies, celery, cabbage, potatoes and onion. The sauce part is tomato sauce, water and garlic. You can buy frozen veggies in a bag for really cheap at Wal-Mart for a dollar. Cabbage is cheap AND filling. Actually, pretty much everything on my list of ingridients are cheap.
The recipe calls for about 1/2 a cabbage head, two stocks of celery (chopped,) two potatoes cut in chunks, onion slice and cut in chunks, and a 16-24oz bag of frozen mixed veggies (carrots, corn, peas, lima beans, green beans) Boil the veggies until the potatoes are soft. Drain. Mix in the tomato sauce (two cans, 16 oz) add water until consistency is "soupy." Add two teaspoons of fresh minced garlic. Simmer for half an hour. Add salt and pepper to taste.
SOUPER GOOD! (teehee, i'm funny) Makes a lot of servings, fills you up, low in calories/high in vitamins AND freezes well to make quick lunches/dinners!

Just about any type of salad. I usually add a bit of grilled chicken. Sometimes I'll add some apples or berries. Yummy. Fruit salad is also great, just pour some vanilla sauce over it and enjoy.

Brown 1lb lean ground beef in dutch oven.
Add one jar (26oz) spaghetti sauce
Add one jar water
Bring to boil
Add 1lb cut pasta (like penne, farfelle, spirals, elbow macaroni etc)
Stir well... cover and simmer until pasta is done, stirring occasionally to stop from sticking.
Serve with green beans or salad from a bag :)
