Unfortunately, Vietnamese restaurants, unless you choose an expensive one, normally have a more chinese influence, and a lot of them use MSG because of this. In Vietnam, they are rightfully proud of their cuisine, which I consider to be the best in Asia-not too spicy like Thai, not covered in msg. It's a very fresh cuisine, relying a lot on fresh leaves, vegetables and sauces. The Hue hotpot would be the spiciest fish stew, but I love the beef bbq rolled in fresh leaves.
If you're in San Francisco anytime, try to find the money to have a meal at the Ana Mandara restaurant, Polk St, owned by Don Johnson and created by Aline Ho. Don owns land in Vietnam and is passionate about the food and country. Otherwise, visit Vietnam and go to a Ngoc Suong restaurant (small chain-Saigon/Nha Trang) or a Lemongrass, in fact there are hundreds, even the street food is fresh, clean and good!!!

I have had some really good Vietnamese food here in Dallas. We have a very large Vietnamese community here that all have wonderful cooking talents. One of my favorite Vietnamese restaurants, Kim Son, is located in Houston. They also have a huge Vietnamese community. Check the link below to see their menu. Oh, it's DELICIOUS.

Head for Kingsland Road area which is the Vietnamese Brick Lane if you see what I mean. The Viet Grill was reviewed in The Independant just this weekend (it is the sister of Cay Tre which I think is one of Mark Hix's favourite spots...) Plenty of unusual dishes and exciting things to try... and reasonable on the wallet too.

In Parkway Camden Town NW1 there is the Viet-Anh Cafe whose food is wholesome, natural, very reasonable and very tasty. A couple of doors away is a noodle bowl shop which is very nice and quite cheap, a couple of doors the other way is galangal which has lovely food but is bit pricier.
