I need some good ideas please!!! I hate to waste leftovers.

OK, there are a million things. Turkey pot pie, shred or dice and freeze for things that call for chicken, turkey tetrazinni, soups.

Oh, and boil the turkey bones and carcass with carrots, celery, onion, garlic, and make turkey frame soup! Actually, that stock would be good for any soup calling for chicken stock!

I like to make a turkey pie with the left overs. Use the same recipe as a chicken pie, just replace chicken with turkey. I use a recipe in my head.

Make biscuit doe, enough to line a 9 x 12 dish bottom, sides and top for pie. Get 1 package of frozen mixed veggies, chop up left over turkey, and make a thin gravy. Pour all of this into the doe lined dish. Place doe covering on top. Bake until crust is golden brown. This has always been a winner at my house.

Turkey Tetrazzini is a winner. Cook some spaghetti. Make a white sauce, add some frozen peas or mixed veggies and a little sherry. Add the cubed turkey, pour over the spaghetti, mix well, top with Parmesan cheese and a little bread crumbs and bake until the top gets crusty.

take 15 bean soup and add turkey in your crockpot. Meal in hours that was different. Also, turkey salad (mayo, celery, onions chopped up) Anything that you would do with chicken you can do with turkey. But cold leftover turkey sandwiches with mayo are the best...

take all the meat off the bones and boil the carcus for turkey stock(can be used in place of chicken. reduce to it is almost paste...place in ice cube tray and freeze when frozen put in a baggies if you need a little stock use how many iced stock.....the meat can be diced and put in small baggies 1 lb freeze then you can use for various dished save some and make turkey salad sandwiches....mayo.chopped eggs,diced celery choped shallots...onions work salt and pepperand diced turkeyafter that is finished you can next week make some dishes from your frozen diced turkey.....of ya..i forgot pick the meat off the bones if you have a dog treat him...if not freeze and use only in soup..by now all we have left is the bones i havent figure out what to do with them yet but discard.....

like the previous entries.................... turkey sandwich, turkey salad, soup. Or you can freeze the left overs and have them again in a month or so. Even if you're not quite sure what you want to do yet, freeze the left overs and decide on it later.

You can make sandwiches with it. Just pull the meat off the bone or you can make Turkey salad. You can also use the bone to make soup, stews, season beans, etc., with. I do all the time. Makes a great homemade soup.

Make enchiladas. LaVictoria or LaPalma enchilada sauce has a recipe on their can. Substitute the chicken for turkey and follow the recipe. We do it just about every year after Thanksgiving. Makes great enchiladas
