It's about 1 1/2 hours drive from Toronto to Barrie on Hwy 400. Assuming no traffic jams, which is assuming a lot.

It depends on what part of Lake Simcoe you're going to.North central Toronto to Barrie is about an hour 15 minutes on a weekday. EasternToronto to Keswick about an hour. Eastern Toronto to Sutton an hour and a half. North central Toronto to Orillia is about an hour 45 minutes.
Long weekends after 3 pm on the Friday, all bets are off. Jumping out at the Holland marsh and canoeing up the Holland River to the lake could be faster.

It depends where at Lake Simcoe. Give yourself around 2 hours.

An hour and a half if there aren't traffic jams. If you're going to hit Toronto anywhere near rush hours, add another hour on top of it just to be on the safe side.

You can try either Beverly Hills or Keswick, both are on the south tip of Simcoe. Its easy to get there as well. Take Hwy 48(Markham Rd) to Hwy 32/Ravenshoe Rd(Just north of mount albert), go west on 32. It ends when you hit Leslie St, now your in Beverly Hills. For Keswick continue north on Leslie St.
