There are thousands, and different varieties grow in different countries. I have eaten approximately 30 different kinds, and many do not have common names, just Latin names. But you need to be VERY careful, as some very nice-looking mushrooms can lead to an agonizing death! I only eat what I can positively, without a shred of doubt, identify. When we were living in Europe I ate no wild mushrooms, as theirs are different from ours and I could not be 100% sure of identification.
The very best kind in the U.S. is morels! Probably second best is a harmless mushroom with a scary common name: "Trumpet of Death." Chantrelles are good, and so are inky caps and shaggy manes. Puffballs are blah beyond belief. Boletus edulus is good but almost always buggy, so I seldom get any. Oyster mushrooms are very nice. Etc. But NEVER eat a mushroom that you have not DEFINITELY identified from a mushroom book as being safe. There are no generalizations or rules, you have to KNOW, and the consequences of a mistake are truly horrible! You don't just die, you die in excruciating pain!

Mushrooms are a ordinary crew contained in the fungi kingdom. There are an envisioned a million.5 million species contained in the international inspite of the reality that only about 5% were completely defined and labeled. yet nevertheless, 5% of one million.5 million is seventy 5,000. So, I received't list them!
