Filet is the cut of meat that comes from the tenderloin cut of a steer. It does not come from "baby cows" that is called veal. The tenderloin cut of a steer is about 2 - 4 inches in diameter and 20-26" long. It is extremely tender because the muscle that comprises the meat is never used by the steer. Mignon refers the the fact that it is wrapped in bacon before it is cooked. Tenderloin can be purchased at almost any good grocery store with a good meat market. Prime tenderloin runs about $25 a pound. Select is cheaper. Get the butcher to cut it for you and wrap it with bacon before cooking it.
Note: Thanks Hipichick.... I forgot to mention that a piece of meat wrapped in bacon does not make it a filet. I have seen restaurants wrap ribeyes in bacon and try to pass them off as filet mignon. If you want the best you have to go with tenderloin.

The goofy chef guy is right, also, the tenderloin is the small side of the T-Bone. Some restaurants use the trimmings from the whole tenderloin and wrap in bacon so it stays together on the grill. And just because a piece of meat is wrapped in bacon does NOT mean it is a filet.
