...evidence of god's existence whenever we Love one another?
Doesn't our definition for "god" determine whether we will find evidence of his existence or not?

Absolutely! You should read the theologian Henry Nelson Wieman, the main theologian of the so-called Chicago School of liberal Christianity from the mid-20th century. He said basically, instead of arguing about God's existence, we should define the word "God" in such a way that God's existence is obvious, and then ask rational questions with empirical answers about God's nature. And he came to much the same conclusion as you... for him, God is the "creative interchange" which creates values of ever-increasing richness. When we love, we are opening ourselves to that creative interchange, and giving it our "ultimate commitment."
You'd fit in well with Unitarian Universalists.

Love is a wonderful thing, but why complicate the issue by bringing in a word like 'god', which has such a vast amount of 'baggage' with it?
To me, it's simple: We should all do our best to be decent to each other, because we regard it as the right thing to do, and for no other reason.

I'd say that nails it -- given that limitless love = god which is the absence of our egos, any time we get ourselves out of the way and trully love others (which, again, means the reduction of the self), we move toward god. 'A Course in Miracles' talks about this dynamic exactly.
