Is there a trick to getting the yolk to stay in the middle so it comes out pretty?

Simple Tricks, for Pretty Deviled Eggs:
The best eggs for "deviling" are small eggs. Because a small egg can be handled and eaten more gracefully, and keeps the fingers cleaner.

Set the egg carton on its side in the refrigerator a day before you plan to boil the eggs. This "centers" the yolks in each egg, thus makes the eggs, eye appealing, when served.

Place the eggs in a medium saucepan, cover them with water and bring to a boil over high heat. Remove the pan from the heat, place a cover on pan, and let stand for 10 minutes.

Transfer the eggs to ice water with a slotted spoon; let sit 5 Minutes. Peel, your done.

Unfortunately there is no secret to keep the yolk in the middle of the egg. Just make sure you are cutting the boiled eggs long ways and not the short side, if that makes sense.

I make sure that the eggs have been in frig for about a week. Then I put them in a pot and cover with cold water. Bring up to a boil for about 5 minutes, stir them around gently so the yolk stays more to the middle then shut heat off and let sit for about 15-20 mins. Stir once in awhile. Make sure you take them out of the hot water with a slotted spoon and put into a bowl with cold water and ice Let sit until you can handle them

Hard cooked eggs are best when not boiled but simmered.

place eggs to be cooked in a saucepan with enough water to cover the eggs. Bring to a boil using medium heat, turn the heat to low and cook for about 15 min covered. or turn heat off and let set for 25 min. Freshest eggs cook with their yolk near the center. for me the difficult part is peeling the shell off and having all the white intact. I drain off the cooking water and then immediately place the cooked eggs in ice water. I crack the shell all over the egg and peel under a small steam of water collecting the shell bits in a bowl not letting them fall into the drain.

I think what works best for me, is after i boil them, i put them in a bowl in the freezer for about 5-10 minutes. The eggs come out nice and pretty.

I just boil them then let them cool on the counter... The yolks are always fine for me.

Remember - they go in cold water in the pot . Then turn the heat up so that there is no sudden temperature changes. Puttin' cold eggs into boiling water will crack 'em every time .
