Get a barbecued rotisserie chicken and a package of chili seasoning mix and a package of flour soft tortillas from the supermarket. Cut up the chicken into shreds. Follow the instructions on the chili mix package and use the shredded chicken as the meat. Serve either rolled up in warmed tortillas or in bowls accompanied by a plate of warmed tortillas. Serve with sangria or with margaritas or with coffee with cinnamon added to go with the theme.

Probably 15 minutes to take the chicken off the bones and chop it and probably another 15 minutes to heat it all together. is that quick and easy enough? You could even do the chicken chopping hours before the meal and start the chili early so you would not have to worry about anything when the guests are starting to arrive.

Do ya got hamburger? Fry up about 3 pounds and drain. To this, add three packages of gravy mix and a can of peas. Put 4 large potatoes in the microwave, poking a knife in each one. Cook on high for 15-20 minutes, making sure you cover them (helps them cook faster). Put a potato on each plate, cutting them open. Pour a measure of the hamburger mixture over each potato. Bread & butter with each plate, and ya got a meal. You can make a tossed salad to go with this. You can also throw a package of frozen California blend veggies into the hamburger mixture, if you really want to beef things up. Any veggie or mixture of veggies works well with this meal. Instead of using potatoes, you can also use rice, noodles or biscuits. Hope your meal works out well. <*)))><

Broil about 3 packets of breaded fish filets with a few slices of lemon when serving as a garnish, a few sprigs of parsely, tartarsauce, oven toasted frenchfries, chop up a cabbage with a carrot & red raddish for color into some mayo for a side slaw, a couple six packs of yer favorite beer & it's up to someone to grab one of those Sara Lee frozen deserts & yer done. Can't get much easier or better than 'fish n chips n beer'!

Pasta, or sometimes people like to make their own tacos or pizza. Just put the ingredients out and let them go nuts. Then you could serve a nice salad on the side and something sweet for dessert.

Make a throw together pasta primavera. You can use what you have.... chicken, mushrooms, asparagus, tomato, onion, garlic are all good. Use basil, oregano or any herbs. Saute any of those veggies and meat with olive oil, toss in some wine, and tomato, or balsamic vinegar, and whatever type of pasta you have. Top with parm. if you have it a serve family style. It works with any combo.

Salsa Chicken. Its so easy we make it all the time. I usually serve it over a huge pile of rice.

INGREDIENTS:
4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream (optional)

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C)
Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

make stir fry. it works with any kind of meat or frozen vegetables, and pretty much any sauce and rice.
