A fresh basil leaf will do if you have it,,, other than that you don't really "NEED" to have one. You may even find you like it better without it !! Personally I like stew with EXTRA black pepper and/or some Tabasco in it.

If you don't have a Bay Leaf hand don't worry, the stew will be fine without it! Next time you go shopping, stock up on the spices you think you are going to need so you can be prepared.

If you don't have one, just leave it out. I never put a bay leaf in my stew and it tastes fine.

Don't worry, they are not essential. You have to take them out anyway.

Try a Bouquet Garni instead, if you have one. (It's like a teabag with herbs in it). They go best in chicken or ham/pork-based soups or thin stews, I have found.

Add a few drops of Red Wine.
