Actually, we are. The human anatomy has changed considerably over the past few hundred years. Statistically, we have grown smarter, taller, and more succeptable to cold than our relatively recent ancestors from the Middle Ages.
In the last 200 years alone, the average height of a human has increased considerably.
However, if you are asking why man like creatures are not continually evolving from apes in present times, the answer is that apes have also evolved from the time of the mutation that caused the split in our species.
Evolution is full of dead ends. We call these mutation. A mutation that is not viable does not survive, while one that does survive to pass on its characteristics is considered to be on an evolutionary path. Moreover, the farther you get from a genetic marker, the more necessary it becomes to introduce new genes to facilitate mutations. Since humans do not mate with apes as a common rule, re-introduction of genes that would cause these mutations is not likely.

What is the motive behind your question? Is it a genuine desire to understand reality? Or are you just repeating an argument you heard in church against evolution?
We did not evolve from apes. Apes and Humans and Chimpanzees all evolved from an earlier primate that has since gone extinct.
Evolution generally happens very slowly -- over thousands or millions of years. You can observe evolution in action if you observe bacteria, viruses or fruit flies, but you won't see it happen for mammals and especially humans.
Evolution is most likely to happen when there is competitive pressure that effects survivability. Humans have mastered their environment and neutralized most of these competitive forces.
Go do some serious study of Evolution. You'll see that it does a much better job of explaining the diversity of life on this planet than the creation myths from the Bible.

We have a common ancestry with modern apes, we did not evolve from current day apes. Realize that adaptation and evolution require a need put upon an organism in there natural environment, basically they adapt or die. Our current evolution has been more intellectual than physical, although small things like the little toe becoming a vestigial body part are occurring presently, not to mention the tremendous loss of hair since early stages of human development. There are slight regressions such as our current president, but for the most part our intellectual minds serves us quite well.

Religion has closed your mind from the possibilities. The theory doesn't, now has it ever claimed we evolved from apes, or monkeys. Evolution is a much more comlicated theory (partially a law, evolution happens, it is fact. Look at the common cold virus wchich evolves constantly) and once you have a better understanding of it you can ask a better question. However, you will never accept it because the religious society has tried to abolish anything that might go against god. My question, if God created man, could he have done it through evolotion?

You obviously have no idea what evolution is.
Evolution is FACT. The idea of common ancestry has been proven beyond a doubt. Anybody that tells you otherwise has their eyes closed. People who use the "evolution is only a theory" argument are ignorant.
The mechanism by which evolution takes place is what is still in the theory stage. Darwin's theory of natural selection best describes how the process takes place, although it can't be proven by empirical scientific data at this point in time.

Evolution seeks to revere the process. What is called evolution today is very different from that which Darwin proposed in The Origin of Species, and the philosophy of the theory of evolution has changed depending upon whatever evidence seems to prove or disprove it.
The fossil evidence that supports evolution is usually based on circular reasoning: paleontology depends on geological evidence, and geology depends on paleontological evidence. Radiometric dating is an inexact disipline at best, so all of this is based on presupposition and, well, guesswork.
All so that our scientists can remove God from the process of creation...

Apparently we have not been EVOLVING upward, but DE-VOLVING downward.
That is consistent both with what we see in humanity and what the Bible says...Sin destroys and tears down human development.
